Basic Red Chile Sauce

4 T vegetable oil
4 T flour
1/2 cup red chile powder (you can use up to one cup if you want)
4 cups cold water
1 1/2 t salt
1 t garlic salt
1 t dried oregano
1 t cumin powder

Heat oil on medium in medium sized saucepan until it is hot.

Add the flour & cook it for 1 minute while stirring constantly.

Add the chile powder & cook it for 1 minute stirring constantly.

Gradually stir in the water being careful that no lumps form.

Add the salt + garlic salt + oregano & cumin.

Simmer for 15 minutes.

Makes 4 cups.
