Maple-Mustard Dressing

1/3 cup red onion, finely diced
3 T. apple juice
3 T. apple cider vinegar
3 T. coarse-grain mustard or Creole mustard
2 T. maple syrup
1/4 t. salt
1/2 cup safflower oil

In a blender or food processor, place the red onion, apple
juice, vinegar, mustard, maple syrup, and salt, and process
until smooth.

While the machine is running, slowly add the oil, and continue
to process until smooth and creamy.

Transfer to an airtight container and store in the refrigerator
for up to 1 week.

Yield: 1 Cup
