GORGONZOLA DRESSING

1/2 cup mayonnaise (lowfat OK)
1/2 cup sour cream (lowfat OK)
1/2 cup buttermilk
1/4 lb gorgonzola (or bleu or roquefort) cheese
freshly ground black pepper
1 garlic clove, minced
1 tablespoon onion, minced
1 tablespoon prepared horseradish

Set aside half of the cheese. Put the rest of the
ingredients in a blender and process until smooth. Add the
reserved cheese. Pulse the blender to coarsely chop the
cheese.
