Creamy Cilantro-Garlic Dressing

2 cups cilantro leaves
1 t minced fresh garlic
1/8 cup water
1 x 10.5 oz / 300 g package lite silken tofu
1 T lemon juice
1 T soy sauce

Place the cilantro, garlic, and water in a food processor.

Process until blended.

Add the remaining ingredients and process until smooth.

Chill for at least 2 hours before using.

Recipe Hint: Serve as a dip for vegetables as well as a dressing
for salads.

To vary, use 1 cup parsley and 1 cup cilantro.

Try balsamic vinegar instead of lemon juice.

You can also use fresh basil leaves.

Omit the lemon juice when using basil.
