NORTHERN LIGHTS BLACK BEAN DIP
450g can of black beans (I've also used kidney beans and mixed beans...)
1 tsp ground cumin
1 tsp chile powder (ie chile/cumin oregeno mix)
1/4 cup vinegar (more or less to taste)
1/4 cup chopped corriander (optional!)

Drain and rinse beans, process in food processer with
other ingregients till fairly smooth, adding water to
bring it to the right texture. As you can tell I like lots
of cumin.

I've served this with chopped veggies and crackers as a
dip, with salsa & FF corn chips, on toast for breakfast
and even on pasta. It is also good to thicken soups.
Next I might try it as a filling for chinese style steamed
buns.
