Ketchikan Couscous

At home, combine in a ziplock bag:
1/3 cup Whole wheat couscous
2 Tbsp. nonfat dried milk
2 Tbsp. chopped dried dates
1/2 Tbsp. brown sugar
1/16 tsp. salt
1/8 tsp. cinnamon
2 Tbsp. chopped walnuts or pecans

On the Trail:
Heat 2/3 cup water to boiling. Stir in the mix
of dry ingredients and cook for 2 minutes. Cover
and remove from heat. Allow to stand until the
liquid is absorbed and the couscous is tender,
about 5 minutes.

Makes 1 serving
