VEGETARIAN STUFFING
2 tbs. Oriental sesame oil
2 large cloves garlic, minced
1 c. diced onion
1 c. sliced mushrooms (Chantarelles, if available)
1 c. diced celery
1 tbs. poultry seasoning
1/4 tsp. sea salt
1/4 c. reduced sodium soy sauce
4 c. dried whole wheat bread cubes
1/4 c. fresh chopped parsley
1 diced Granny Smith apple (optional)
Heat sesame oil and saute the garlic, mushrooms, onion,
and celery. Sprinkle poultry seasoning over vegetables.
Dissolve salt in soy sauce and add to pot. Stir, cover,
and continue to cook until vegetables are done (about 5
minutes). Add bread cubes, parsley, and optional apple.
Mix well.
