SAN FRANCISCO STEW
Ingredients:
1T olive oil
1/4c app. juice
2c each onion,
frozen corn, stock
1/2c each celery
carrot
red bell pepper
4c cooked bl. beans
2T each garlic
tomato paste
honey
1c tomato
2t cumin
4t chili powder
1/2t oregano
1/4c cilantro
Directions:
Over medium-high heat combine apple juice and oil. When
hot, add onions. Saute until soft but not brown. Add
celery, carrot and bell pepper; saute 5 minutes. Add
remaining ingredients; bring to a boil. Lower heat; simmer
15 minutes.
Before serving, puree 1 cup of stew in a blender; add back
to the pot. The fresh cilantro is a vital ingredient. This
stew is very easy to make. Itīs my favorite wintertime
vegetarian meal and everyone that I make it for loves it!
