Vegetarian Meatballs
2 eggs
6 tablespoons water
2 teaspoons soy flour
1 cup cream-style cottage cheese
1/2 cup chopped onion
1 teaspoon basil
1/2 teaspoon salt
l cup chopped walnuts or pecans
2 cups dried bread crumbs
2 cups mozzarella cheese
3 1/2 cups spaghetti sauce
Beat eggs, water, soy flour, cottage cheese and seasonings.
Stir in bread crumbs and nuts.
Shape into walnut-size balls.
Put a thin layer of spaghetti sauce in the bottom of a 13 x 9-inch baking dish.
Line meatballs on sauce in pan.
Pour remaining sauce over meatballs and sprinkle cheese over all.
Bake 45 minutes at 350 degrees F.
Serves 6 to 8.
