BLENDER POTATO CASSEROLE
1 c. milk
3 eggs
1 1/2 tsp. salt
1/8 tsp. pepper
1 c. cubed cheddar cheese
2 tbsp. soft butter
1/2 green pepper, seeded & cut up
1 sm. onion, quartered
4 med. potatoes, pared & cubed
Number of servings: 6. Temperature: 350 degrees.
Procedure: Preheat oven.
Grease 1 1/2 quart casserole.
Put all ingredients in blender (or food processor) container in order listed.
Cover and run on high speed just until all potatoes go through the blades (do not over blend).
Pour ingredients into casserole and bake for 1 hour.
NOTE: Perfect accompaniment for ham. Double recipe fills 9 x 13 inch pan.

4 med. raw potatoes, pared & cubed
1/2 green pepper
Put all ingredients in blender in order given.
Cover and turn to mince until all potatoes go through blades.
Pour into greased shallow casserole and bake at 350 degrees about 1 1/2 hours or until done in center.

2 tbsp. butter
1 c. Cheddar cheese, cubed
1/2 c. green pepper, diced
1 sm. onion, quartered
4 med. uncooked potatoes, peeled & cubed
Combine all ingredients in a blender container in order listed.
Cover and blend on high speed until potatoes go through the blades.
Don't over blend.
Pour the mixture into a greased 1 1/2 quart casserole dish and
bake uncovered at 350 degrees for 50 minutes to 1 hour.
8 to 10 servings.
