Veggie Burger Basics
INGREDIENTS
Cooked Grains - (one or more of the following)
Bulghur
Brown rice
Millet
Cooked Legumes - (one or more of following)
Lentils (green/brown)
Any beans really
Scrambled tofu
Okara
Reconstituted TVP
Vegetables - (optional, but mirepoix really helps)
Mirepoix (onions, carrots, celery)
Tomato (especially sun-dried)
Whatever you have lying about
Fungi - (optional)
Mushrooms - any kind, minced
Binding Agents
Chickpea flour (preferred)
Whole Wheat flour
Seasonings - (whatever you like)
Salt
Pepper
Any favorite spice mix (eg, Spike)
Chili powder
Yeast extract (Marmite, Vegemite, etc)
Tabasco
Miso (adjust salt accordingly)
METHOD
Throw everything in a big bowl and mix it up like crazy.
Taste it, adjust seasonings if necessary.
Add the binder (chickpea flour) slowly so you don't overthicken
the mixture (if you do, add a little soy milk or water).
Don't make the patties too thick or thin.
Cook till browned or however you like them.
I prefer browning them in a little olive oil, but you could
probably do it in a nonstick pan (ick).
Serve however you fancy them.
NOTES
I make my own veggie burgers, but like everything I cook, it's
always ad hoc.
I just made a big batch last night and will be eating it all
weekend (and probably into the week).
They're made of bulgur, rice, tvp, mirepoix, garlic, salt,
pepper, herbs d'provence, a little sage, a healthy blast of
Tabasco, fresh parsley, some chickpea flour, a touch of tomato
sauce, and a little Marmite.
I'd made my grains the night before.
Cooked mirepoix in olive oil, added some Marmite and the other
herbs and spices, and used that and a little water and tomato
sauce to hydrate my tvp.
Added that to grains.
Mixed in enough chickpea flour to make it hold.
Browned in cast iron skillet with a little bit of olive oil.
Scrumptious.
