Potato Latkes 2

1/4 cup onion, chopped
2 egg substitutes (I use 3 teaspoons Ener G + 4 tablespoons water)
1 teaspoon salt 1/4 teaspoon pepper
2 tablespoons matzo meal (or cracker/bread crumbs)
3 cups golden potatoes, shredded oil, for frying (not olive oil)


1. Saute onion is a large skillet until almost translucent
and remove from heat. Mix egg replacer, salt, pepper, and
matzo meal with potato.

2. Add sauteed onions and let the mixture sit for a couple
minutes while you heat oil for frying.

3. Spoon mixture into oil like a pancake and fry on both
sides until golden brown.

4. Remove and let drain on paper towels for a few minutes.
Eat with applesauce and/or vegan sour cream!
