Mock Meatballs
2 cups uncookd bulgar
1 tsp minced onion
1 egg - vegan egg substitute
Dried oregano to taste
Freshly ground black peper to taste
1 - 3 tbs virgin olive oil
1 cup tomato juice
Mix together bulgar, onion, and egg substitute.  Season with
oregano and peper.  Form into walnut sized balls.  Coat skillet
with oil and place over medium-high heat.  Add the balls and
cook until browned.
Add the tomato juice; cover and simmer until the bulgar softens,
about 5 minutes.  Add extra juice if skillet  becomes dry.
