Lentil Burgers
1 cup dry lentils
2 1/2 cups water
1 bay leaf
1/2 cup diced onion
1/2 cup diced celery
1 tbs olive oil
1 tbs chopped tarragon
2 tsp chopped marjoram
1 tsp ground cumin
1/2 tsp dark samame oil
1/2 tsp fresh lemon juice
1/2 tsp salt
1/4 tsp black pepper
3/4 cup rolled oats
3/4 cup dired, vegan, bread crumbs
In sauce pan, simmer lentis in water with bay
leaf until lentil skins split easily, about
45 minutes. Meanwhile, cook onion and celery
in oil, stirring, until soft, about 5 minutes.
Remove from heat heat and stir in the remaining
ingredients except the oats and bread crumbs.
Process the oats in a blender until finely gound.
Combine oats and bread crumbs with lentil mixture.
Shap mixture into 12 patties while its still warm.
Preheat oven 400F. Bake patties on a non-stick
baking sheet or a sheet lightly coated with nonstick
cooking spray until patties are lightly browned, about
15 minutes.
