Potatoes with Peas
1 tbs vegetable oil
1 tsp cumin seed
1/2 cup finely chopped red onion
2 medium tomatoes, cut into 1 inch
pieces (1 1/2 cups) or 1 1/2 cups
canned copped tomatoes with juce and
reduce amount of water in recipe.
1 tsp salt
1/2 tsp ground cayenne pepper
1/4 tsp ground tumeric
3 medium red potatoes (1lb) peeled,
cooked and cut into 2 inch pieces
(2 cups)
1 cup frozen green peas
1 cup water
2 tbs finely chopped fresh cilantro
1/2 tsp spicy garam masaala
1. Heat oil in 2 quart saucepan over
medium-high heat. Add cumin seed;
sizzle 15 to 30 seconds.
2. Add onion; stir fry 1 o 2 minutes
or until golden brown. Stir in
tomatoes, salt, red pepper and tumeric;
stir fry 1 to 2 minutes or until
tomatoes are softened.
3. Stir in remaining ingredients except
spicy garam masaala. Heat to boiling;
reduce heat to medium. Cover and simmer
5 minutes. Uncover and simmer about 5
minutes longer or until sauce thickens
slightly. Stir in spicy garam masaala.
