Creamy Pea Soup
1 tbs olive oil
2 1/2 cup peas
1 potato, peeled, cubed
1 small head butter head lettuce, chopped
6 cups vegetable broth
Salt and pepper to taste
Basil leaves for garnish
Place 1/2 tsp oil, peas, potato and lettus in a large
pot and cook over medium low heat for 5 minutes.
Add vegetable stock and bring to a boil. Lower heat, cover
and simmer until the vegetables are tender, about 20 minutes.
In food processor, puree the sopu until creamy. Return to the
pot and reheat slowly. Season with salt and pepper.
Garnish with oil and basil.
