Triple Red Soup
Serves 4-6
1 red peper seeded and chopped
1 onion chopped
1 garlic clove crushed
2 tbsp olive oil
1 14oz can chopped tomatoes
4 cups stock
2 tbsp worcestershire sauce
2 tbsp long grain rice
1 7ox can red kidney beans
1 tsp dried oregano
1 tsp sugar
salt and ground black pepper
cheddar cheese grated to garnish
1. Put the pepper, only, garlic and oil into a large saucepan.
Heat until sizzling then trn down to low. Cover and cook
gently for 5 minutes.
2. Add rest of ingredients, except garnishes and bring to a
boil. Stir then simmer covered for 15 minutes. Check the
seasoning, garnich and serve hot.
