BLENDER "DUTCH" POTATO PANCAKES

Pare and dice enough white potatoes to make 2 cups.
In electric blender place 2 eggs, 1 teaspoon salt and 1 cup potatoes.
Cover and blend at high speed 5 seconds.
Add 1/4 cup unsifted regular flour and remaining potatoes.
Cover and blend until potatoes are just grated (3 seconds).
8 pancakes.
