SAMOSAS (4)
INGREDIENTS:
1/2 kg potatoes, boiled
120 gms green peas, boiled and mashed
3/4 tablespoon Aamchoor(dried mango powder)
1/2 tablespoon chilli powder
1 teaspoon turmeric powder
1/4 teaspoon cardamon seeds
3/4 tablespoon cumin seeds
1 tablespoon coriander seeds
1 " cinnamon stick
1 green chillie
4 cloves
4 peppercorns
a pinch of baking soda
1/4 kg plain flour
4 tablespoons ghee, melted
few cilantro leaves
salt to taste

METHOD: Mix the flour, baking soda, salt and ghee. Using
just enough water, knead into a dough.Chop half the
potatoes & mash the rest of the potatoes.Powder roasted
coriander seeds, cardamoms, cinnamon, cloves, peppercorns
and1/3 cumin seeds. Heat 2 tablespoon oil and fry 1/3
cumin seeds, slightly mashed potatoes, boiled
peas,powdered masalas, aamchoor and salt. Let the mixture
cool then add ginger, garlic, green chillies, cilantro
leaves & remaining cumin seeds.Divide the dough into small
portions and roll out in thin rounds Cut into half. Fold
into triangular shape. Seal the cut edges with water &
gently spoon some potato mixture into this pocket. Seal
the edges with water.deep fry in hot oil.

UPMA INGREDIENTS: 1 tbsp. Oil 3 cups Water 1 Onion, finely
chopped 1 tomato ,finely chopped 2 cups Coarse semolina
(rava) 1 cup boiled mixed vegs.(optional) 1 tsp. Mustard
seeds 1 tsp. Urad Daal 4 curry leaves 1 tsp. Ginger,
minced 2 Green chilis, very finely chopped salt to taste
few cilantro leaves few toasted cashewnuts Dry roast the
semolina until very light brown. Heat the oil, add mustard
seeds, curry leaves, urad daal, chopped onion, and green
chilis ,tomato, mixed vegetables.Cook for a minute. Add
the water and bring to boil, lower the flame and add the
rava slowly, stirring while doing so.Garnish with cilantro
leaves and toasted cashewnuts.
