PISTA GREEN SPLENDOUR - INDIAN
Ingredients
2 cups basmati rice
1 cup pistachios
a few spices (cinnamon, cloves, cardamom)
2 onions
salt to taste
3 tbsps. ghee
For the masala
1 small bunch of green coriander
4 green chillies
a small piece of ginger
4 flakes of garlic
1 cup grated coconut
1/2 tsp. saunf
1 tbsp. dry coriander
1 tbsp. lemon juice
For garnishing
1/2 cup cooked green peas
a few fresh mint leaves
Method
Clean and wash the rice and soak it in water for about 15
to 20 minutes. Grind the ingredients for the masala.
Heat ghee in a handi and fry the spices. Now add the
finely sliced onions and fry till golden brown. Mix in
the pistachios and fry for a minute. Add the ground
masala and fry till the raw smell disappears. Mix in
the drained rice and fry for some time. Pour in 4 cups of
water and add salt to taste. When the pulao is ready keep
the handi closed for sometime.
To serve
Spread the pista green pulao on a serving plate and
decorate with cooked green peas and fresh mint leaves all
round.
