KADAI PANEER - INDIAN
INGREDIENTS:
500 gms. Paneer cheese
100 gms. Green pepper( capsicum)
1 tbsp. coriander seeds
5 dry red chilies
2 green chilies, finely chopped
1" piece ginger, grated
3 large cloves garlic, ground to a paste
3 large tomatoes, blanched and chopped
1 tblspn. dried fenugreek leaves
2 tblspn.cilantro, finely chopped
3 tblspn. ghee
salt to taste

METHOD:Cut the panir into flat thin pieces.Deep fry in hot
oil till light brown. Drain off the excess oil on several
layers of paper towels.Grind the red chillies and
coriander seeds to pwd. Heat the ghee, add the ginger,
green chillies, garlic. Cook for a minute. Add the green
pepper and powdered masalas,fenugreek leaves and cook for
a while. Add the tomatoes and cook till the ghee
separates. Season with salt. Just before serving, add the
cilantro and paneer. Gently mix and cook for a few
minutes. Serve hot.

KADAI PANEER 2 - INDIAN

Ingredients

2 cups paneer cubes
2 tbsps. onion finely minced
4 tbsps. coconut paste
2 tbsps. cashewnut paste
1/2 tbsp. chilli powder
2 tbsps. tomato puree
3 tbsps. butter
Salt to taste.

Method

Put two tbsps. of butter in the kadai and fry paneer
cubes till light brown. Drain and keep aside. In the
same kadai add the remaining butter and fry minced
onion till golden brown. Mix coconut and cashewnut
pastes and fry for a minute. Now add chilli powder (and a
little garam masala powder if you want it more spicy)
and tomato puree. Fry till a nice aroma arises. Put in
about half a cup of water. Allow to bubble, then mix in
fried paneer cubes. Add salt to taste. Simmer for a
while. Serve hot with rotis.
