Breakfast Egg & Veggie Casserole
10 eggs, beaten
2 cups low fat cottage cheese
1/4 cup butter, melted
1/4 cup flour
1 tsp baking powder
1/2 – 1 green or red pepper, diced
1 cup fresh mushroom, broken into smaller pieces
2 cups shredded cheddar cheese (or a combination of mozzarella and cheddar)
1/2 tsp salt

Directions
1. Preheat oven to 350 degrees.
2. Mix all ingredients together in a large bowl.
3. Pour into a 9×13 casserole dish and bake for 35 minutes.
