BASIC WHITE SAUCE

2 Tbs. butter
1/4 cup flour
2 cups milk
1/2 tsp salt
1/8 tsp pepper

Melt butter. Mix in flour, salt and pepper. Return to
heat slowly adding milk, stirring constantly with whisk or
spoon. When smooth, continue cooking and stir with spoon
until thick. Season with desired spices. Can be added to
soup recipes to make creamy flavor. Can add grated cheese
to make cheese flavored sauce.
