Dijon-Style Mustard
1/2 cup mustard seeds, a combination of brown and yellow (50/50 ratio)
1/2 cup white wine
1/2 cup white wine vinegar
1/2 teaspoon kosher salt
1 tbsp honey
Optional: 1/4 cup finely diced onions, 1 tbsp fresh thyme or tarragon
In a small bowl, combine the mustard seeds, vinegar, wine, and salt.
Stir to combine. Cover and let the mustard seeds soak for about 24 hours.
Add the honey to the mixture, and blend in a food processor or blender
until combined. Store in an airtight container in the fridge; allow t
he mixture to rest for a day before using, as flavors will meld
together and soften a bit.
