BLENDER SPICY APPLE JAM
3 lbs. apples
2 c. water
7 1/2 c. sugar
1 tsp. allspice
1 1/2 tsp. cinnamon
1/4 c. lemon juice
1/2 bottle Certo
Peel and cut in eighths about 3 pounds apples.
Using 2 cups water, place 1/4 of apples and 1/2 cup water in blender.
Blend on high for 13 seconds.
Repeat with rest of apples and water.
Measure 5 cups prepared fruit in large saucepan.
Add sugar, allspice, cinnamon and lemon juice.
Place over high heat.
Bring to boil hard for 1 minute.
Stir constantly.
Remove from heat.
Add Certo.
Skim off foam.
Ladle into 10 jelly jars.
Cover at once with hot paraffin.
