Guacamole Salsa
Serves 4
2 tomatoes, skinned and chopped
1 tbsp grated onion
1 garlic clove crushed
1 green chili, halved, seeded, chopped
2 ripe avacadoes
2 tbsp olive oil
1/2 tsp ground cumin
2 tbsp fresh coriander or chopped parsley
juice of 1 lime
salt and ground pepper
lettuce leaves
1. Using a sharp knife, slash a small
cross on the top of the tomatoes,
then dip briefly in bowl of boiling
water. Skins will slip off easily.
Remove the core and chop the flesh.
2. Put the tomato flesh into a bowl
together with the onion, garlic and
chopped chili. Have and pit the
avacadoes then scoop the flesh into
the bowl mashing it with a fork.
3. Add remaining ingredients except for
lettuce and mix well seasoning to
taste.
4. Lay lettuce leaves on a platter and
spoon in salsa. Serve Immediately.
