BLENDER CARROT BREAD

1 1/2 c. sifted flour
1 1/2 tsp. baking soda
1 1/2 tsp. cinnamon
1/2 tsp. salt
1 c. nuts (opt.)
2 eggs
3/4 c. sugar
1 c. salad oil
1 tsp. vanilla
1 1/2 c. carrot pieces

Heat oven to 350 degrees. Grease 9"x5"x3" loaf pan.
Place flour, soda, cinnamon and salt into large mixing bowl.
Blend nuts and add to dry ingredients; if using nuts.
Place eggs, sugar, oil and vanilla into blender.
Mix until smooth. Add carrot pieces into blender and liquify.
Pour liquid mixture over dry mixture and stir until moistened.
Bake 1 hour at 350 degrees.

Frost with Lemon Glaze (optional).

LEMON GLAZE:

1 c. confectioners' sugar
1/2 tsp. lemon juice
1 tbsp. milk
