Sweet and Sour (backpack recipe)
1 cup instant rice
1 carrot
1/2 cup candied pineapple tidbits
5-7 oz. chicken or shrimp (can or 7-oz pouch)
4 oz. prepared Sweet & Sour sauce (Blue Dragon
pouch, or repackage from a jar)
Boil instant rice with an equal volume of water
for 1 minute then allow to stand.
Meanwhile, slice the carrot thinly. Cover with
water and boil 6 minutes. Then add the pineapple,
and drain off most of the water. Add remaining
ingredients and heat to boiling with stirring.
Serve over rice.
